What to experience (not necessarily see) in Paris, Venice and Rome?

My wife and are finally able to save enough for our first trip to Europe. We will of course see the Eiffel Tower, the Louvre, the Vatican, etc. but what areas should we see, foods to try, and other experiences to truly get the feel of these places.
