Going to London on Monday! Need advice.

I just booked a last minute trip to meet my sister in London (she was with a friend who basically ditched her and their plans in Germany, so she is currently stranded). I haven't been to Europe in 10 years, when I went briefly to France and Spain. I'm looking forward to the trip, but I honestly don't know where to start researching things to do. I'm very unfamiliar with the area. I will be there for exactly 7 days.

Things I plan on doing:

-I'd like to get out of London for sure. Because my passport expires in 3 weeks (!!!) I can only go to England, Ireland, and Scotland. So I'd like to venture out in those parts.

-I love Harry Potter, so I'm trying to get tickets to the studio tour. Might not be able to if it's booked.

I'd LOVE to hear suggestions since I have limited planning time. I don't like super-touristy things and prefer to see more genuine areas, restaurants, neighborhoods, etc. I am very interested in visiting an old Castle or something. I love good beer. I love old buildings and history.

If anyone has any must-see things, please share! Suggestions on good cheap hotels/hostels are also appreciated, or even just good areas to look in, since I still need to find a place to stay.

EDIT: As far as money goes, we have some to spare but we're definitely on a budget. I'd like to do some nice things but overall keep it cheap.
