Travel suggestions

My boyfriend and I are thinking about going on a short getaway/mini holiday in April before schools finish for Easter and we were thinking of going to Europe. Due to being university students we don't want to go anywhere that's too expensive, obviously, however we're not sure where yet; anyone got any suggestions of cheapish European countries to travel to? This will be our first holiday abroad together and I'd like it to be one to remember, I haven't been to many places in Europe. We both enjoy the seaside, the countryside and of course the city and are interested in culture and a fantastic scenery; although I enjoy the city I have never really experienced the countryside. Moreover we don't want to go anywhere that's really tourist populated as hotels there etc. will be expensive and more costly but at the same time somewhere that is well populated and safe to travel to/stay. I've already visited France and Belgium, he's visited Austria or Switzerland and France (I think) - I don't mind returning to the countries him/I have visited although preferably not France as I'm spending my year abroad there. We will most likely travel from London however this depends how we get there whether it's via plane or ferry (depending where we go of course).

Any recommendations on cheapish European countries to visit? Is Interrail any good? Is it worth getting a country pass?
