Requirements for Trekking in Nepal in October?

I'm really confused about which permits and documents I need to go to Nepal in October for some independent trekking.

I know very little about Nepal, but I've always wanted to see it and explore. I was looking at the different types of treks and am thinking about a short trek (no more than a week long) in the Annapurna region. I'm open to other places too. I just want great views.

I would be going mid- to late October for no more than a week (7 days) hopefully. I'm currently living in Thailand so will be travelling from Bangkok to somewhere in Nepal by plane.

I'm interested to know if anyone has ever been trekking in Nepal, where the best places are to go (I'm reasonably active, but not a climber), what permits and other documents I would need (and how to obtain them), what kind of gear I would need (hiking gear is a given, but what else for the region?), and how much this could realistically cost. I would prefer something budget-friendly, but I can certainly start saving as well.

There is a lot of information online, but I'm not entirely sure what I should be looking for, which is why I came here. Would you be able give me a simplified version of the information I can find all over the place?

Thanks!
