Traveling from Dublin to Isle of Man to Cardiff

Next April I am heading to Cardiff for a wedding and figured why not explore a little on the way. So the plan is to fly into Dublin and make our way to Cardiff. I'm looking for things to do in (restaurants)/around Dublin that aren't too touristy. I'd love to get out of the city and enjoy the landscape. Being from the US, I thought Cliffs of Moher, Arran Islands were just not feasible and too far... it's nice to be wrong!).

Best way to Isle of Man: ferry or plane? Looking for recommendations on where to stay, eat, etc while there.

And any suggestions on the best way to get from Liverpool to Cardiff. We'd love to see some of the countryside, but can't rent a car so we'd have to figure it all out via bus/train.

Thanks!
