I'm going to have around £500 to travel anywhere I want to by September, but don't know where to go, what are some of the best places?

I have researched a lot today and have mainly found that Europe is pretty much my only hope, I love Europe so it's good. However, my dilemma lies in the fact that I do not particularly like the idea of hostels, I would like my own freedom, peace and safety. Having said that, I have never been in one, so any advice enlightening me to what they are actually like would be nice too.

If anyone could point me to a good site to look on, that would be great too, I'm currently using Skyscanner.

I love scenery and looked up Iceland but there seems to be few hotels near nice landmarks there, but maybe I'm wrong. I mainly like arctic climates.

I also would like to do a bit of shopping, nothing grandiose, just explore the culture, buy the food and souvenirs. Maybe near a populous area to socialise.

I'll list some of my favourite countries in case they are particularly good; Germany

Iceland

Norway (All Scandinavian countries)

Italy

So where would be the most beautiful place to travel to, live in and spend in, for 1 week in the winter months (October region) in the range of £500, edging £600. Any help would be massively appreciated!
